This is a cookie that is considered a mandatory item on the Christmas cookie baking list at Ms. CocoaJava's house!

The secret to these cookies is to find the small chocolate mint baking disks that are sold at Fanny May candy stores. Once you have these, you may begin. If you are planning to make these cookies during a holiday season, plan ahead to beat the rush - those Fanny May disks do often sell out during such times!

Sift together:
3 cups flour
1 tsp. baking soda
1/2 tsp. salt

Cream together:
1 cup butter
1 cup sugar
1/2 cup brown sugar

Add to creamed mixture:
2 eggs
1 tsp. vanilla

Mix thoroughly. then, mix the wet mixture with the dry mixture.

Roll a small ball of dough, and place it on an ungreased cookie sheet. Center a chocolate disk on the ball, and press down on it gently to flatten ball. Roll another small ball of dough, place on top of the disk, and gently flatten it down to cover the chocolate disk and enclose it. Place half of a pecan or walnut centered on top.

Bake at 375 degrees for 9-12 minutes. Enjoy.
